For dry ingredients
- 2 ½ cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- ¾ teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon salt

Instructions
Make dough
- Preheat your oven to 350°.
- Combine the flour, ginger, baking soda, cinnamon, cloves, and salt in a bowl.
- Use an electric mixer to beat the margarine and one cup of sugar until fluffy.
- Mix in the egg.
- Add the molasses and stir.
- Add the flour mixture and spices a little at a time until just incorporated.
Shape and bake
- Use a 3-inch ice cream scoop to portion out the dough.
- Roll into balls and roll the balls in granulated sugar.
- Place onto a cooking sheet lined with parchment paper.
- Bake until the cookies are puffed and the edges begin to turn light brown, about 10 to 12 minutes.
- Cool the cookies on the baking sheet for several minutes, then transfer to a rack to cool completely.
Thing to Note:
These cookies are even better the next day as they get softer and softer when stored in an airtight container, and they will keep well in the refrigerator.
