- Combine the yeast, sugar, and 1 ½ cups warm water in the bowl of an electric mixer and let stand until foamy, about 5 minutes.
- Add 3 ½ cups flour, salt, garlic powder, and olive oil.
- Use a spatula to mix everything together.
- Fit the electric mixer with a dough hook and mix on low speed for 1 minute.
- Increase the speed to medium and mix until a ball forms and clears the sides of the bowl, about 5 minutes.
- If the dough remains sticky, add the remaining ½ cup of flour, 1 tablespoon at a time, until the dough is smooth and soft.
- Pour 1 teaspoon of olive oil onto your hands and rub them together.
- Remove the dough hook, form the dough into a smooth ball, and return it to the mixer bowl.
- Drizzle another teaspoon of olive oil over the dough and turn to coat it completely.
- Cover the bowl with plastic wrap and let the dough rise in a warm, draft-free place until it has doubled in size, about 1 hour.
- Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 more minutes.
- Preheat your oven to 500°.
- Dust your work surface with flour.
- Dust a baking sheet with semolina flour.
- Roll out one dough to form a circle that fits into the baking sheet.
- Cup your hand into a C-shape and press firmly around the edges to create a ½-inch wide lip to form the crusty edge.
- Poke the pizza dough with a fork several times to prevent it from forming bubbles as it bakes.
- Continue with the second piece of dough.
- Top with your favorite toppings and bake until the crust is golden and the toppings are melting, about 10 to 13 minutes.
