February Sprinkles

From the drudgery of winter two holidays collide and burst into a sprinkle-y, festive holiday smack dab in the middle of the month.

Ash Wednesday and Valentines are on the same day this year. So, let’s do a mash up of our favorite holiday treats.

All we have to do is mix and match some SPRINKLES!

How to make Princess Pancakes

And from my new book,  You Can Cook Any THING (Volume 1), here is a recipe for Princess Pancakes.

Servings

Serves 4 – 6

Time To Prepare

30 minutes ‘til it’s ready

Ingredients

For Glaze

  • 1 cup heavy cream
  • ½ cup maple syrup
  • 4 ounces cream cheese, cut into chunks
  • 1 tablespoon vanilla
  • Kosher salt

For Pancakes

  • 2 cups My Way pancake mix*
  • 2 tablespoons sprinkles
  • 2 cups milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 6 tablespoons butter, melted

Directions

Heat the cream in a deep pot over medium heat. Add the maple syrup, cream cheese, and vanilla. Season with a tad of salt. Stir until the mixture is smooth and just beginning to bubble, about 5 minutes. Remove from the heat and keep warm.

Place pancake mix into a large bowl. Add the sprinkles. Stir in milk, eggs, vanilla, and melted butter until smooth. Heat a grill over medium high heat. Ladle about ¼ to ½ cup batter onto the grill. Cook until bubbles form on the top of the cake and the bottom is golden brown, about 3 minutes. Flip and cook on the other side, about 3 minutes more.

Pile several pancakes onto a plate. Spoon the warm glaze over the top. Sprinkle more sprinkles all over.

*My Way Pancake Mix

  • 2 cups unbleached all-purpose flour
  • ¼ cup granulated sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
